Ajies belong to the Genus Capsicum, made up of more than 25 species, 5 of them domesticated since pre-Hispanic times in Central and South America. The yellow pepper, also called pickled pepper; It is nowadays being a crop with a growing importance in exports; for being a product used in kitchens worldwide. This type of chili is one of the basic inputs for gastronomy in Peru and worldwide;using it in the elaboration of multiple stews in the different regions. It is used for fresh consumption, dry (dehydrated) or in paste (processed), for export it is known as Peruvian chili. It is part of a huge number of popular recipes of Peruvian home cooking.
